Rainbow ‘Rice’ (AIP~)

Rainbow Rice 6When walking, walk. When eating, eat.

That’s a Zen Proverb.

Eating mindfully is a powerful way to approach the diet and lifestyle changes that are required on a healing protocol.

And it is also an excellent way to begin a mindfulness practice.

Though I’m hardly an expert.

Mondful EatingI’ve been serious about yoga for 13 years, and even though yoga asanas are specifically designed to prepare the body and mind for meditation, I’m still a fussy and distracted meditator.

I do have moments of accidental mindfulness.

When I am simply here now, acutely aware of everything.

But you don’t get full marks for being accidentally mindful.

The goal is to be mindfully mindful.

Even though I consider myself to be profoundly inexpert in the mindfulness realm, eating is a good place to start.

There is something inherently contemplative about sitting quietly with a bowl of rice.

Just savoring.

Just sitting.

Just eating.

In my case, of course, there’s no rice.

Which sounds like it could be one of those weird zen riddles designed to aggravate you until you find enlightenment, like what is the sound of one hand clapping?

  • 1 head Cauliflower, with stalk & leaves
  • 2 Carrots
  • 2 heads Broccoli, with stalks
  • ¼ small head Purple Cabbage
  • ½ cup Bone Broth
  • 3 tablespoons Tallow or Coconut Oil
  • 2 tablespoons Coconut Aminos
  • 2 teaspoons Himalayan Salt
  • 1 tablespoon ground Ginger

‘Rice’  the vegetables using a hand grater or the small side of the grating blade in a food processor.

Some of the vegetables might turn out looking a bit more like vermicelli than rice, but it’s all good.

If you use the food processor, process in batches & remove the larger pieces that evade the ricing process as you transfer each batch of the processed vegetables into a bowl.

Add everything except the vegetables to your biggest frying pan or a wok & stir over medium heat to combine and melt the fat. Once warm, turn the heat to medium-high, add the riced vegetables and stir gently until hot and softened.

Serve immediately or store in the refrigerator for the delicious days ahead.
